Yacon (Smallanthus sonchifolius)

With a crunchy like texture and a sweet taste, a very popular Yacon plant has been consumed for centuries in Peru, as a refreshing fruit and as a medicine. Yacon

Yacon (Smallanthus sonchifolius) is a member of the sunflower family. It has small yellow flowers and it develops rather large tubers. The plant contains 86%-90% water and it is packed with sugar. Tubers can have different colors ranging from yellow to orange, red, and pink or purple, each with different flavor, but all are crunchy and rich in water. When crushed, one gets a nice juice. The name Yacon comes from the Quechuan word llagon, which means a”watery root”.

Yacon is packed with sugar! However, its sugar in question is mainly oligo-fructose (known as fructo-oligo-saccharide – FOS), a special type of sugar (classified as prebiotics) which cannot be absorbed by our body. That means our body is not able to digest the sugar found in Yacon (it passes through the system without leaving behind absorbable sugar compounds). Therefore, even naturally sweet Yacon has low-calories and its sugar does not raise our blood glucose levels.

If taken raw, tubers are good as a diuretic for kidney and bladder problems.
